Ingredients

  • 4 oz coffee (strong)
  • 1 cup non-dairy milk (of your choice, unsweetened)
  • 1 TBSP pumpkin puree
  • 2 tsp erythritol (to taste, or granulated natural sugar-free sweetener of choice)
  • 1 tsp vanilla extract
  • 1/4 tsp pumpkin pie spice

Instructions

  1. Brew coffee while making pumpkin milk mixture.
  2. Place a small saucepan on medium heat. Combine milk, pumpkin puree, and erythritol. Whisk together.
  3. Keep whisking until mixture is warm.
  4. Turn off heat. Add vanilla and pumpkin pie spice.
  5. Pour coffee into a mug, then pour pumpkin milk mixture into it.
  6. Enjoy!
